Sure, I'll share the recipe, but I really wish they weren't nicknamed that... Haha...
I'm not too sure what I did, I followed a recipe and changed it, so this is as close as I remember. Ok.
*Raw cupcakes:*
Ingredients:
-1 cup young coconut meat (usually from one coconut, the thick kind though, and that's a bit of a gamble)
-2 tbls coconut oil
-1 medjool date
-1/4 cup coconut water
-1/2 vanilla bean scraped
-pinch sea salt
-now I used some cherries to try and color it pink, which didn't work too well. beet juice is a much better solution in this case, I just didn't have any.
-Now all these you blend in a blender until completely smooth. I used a coffee grinder which is bad for it, but blends very very smoothly.
-Keep this chilled until ready to use.
Then:
-1 cup walnuts
-5 medjool dates
-2 tbls carob powder (or cacao, I used carob this time)
-1 tsp coconut oil
-pinch sea salt
-All these you process in a food processor until a nice mush.
-Roll these into desired sized little balls and press into paper cups, shaping around their sides.
-Frost with coconut frosting.
-Now I added goji berries to decorate but if you get the frosting color and consistency right, they won't be necessary. Or you can put a cherry on top.
And don't forget to share!
